It's that European bread! Once you have it you can't settle for less.
My expectations for walking the Camino were all spiritual and pretty dramatic. I didn't have some amazing, out of body, life awakening, earth shattering experience. I did have a lot of amazing bread and food. I'm not even talking some Michelin star, fancy pantsy, gastronomic meals... really basic food was incredible in France and Spain. Down the rabbit hole of real food, I go.
My goal is to have that level of real food here in my everyday life. I don't want diet food. I just want the real deal. I want the unadulterated foods that actually benefits my family's life. The only thing I want removed from our foods are the chemicals and modifications. It has been surprisingly difficult. There is so much information out there but what matters to me is how we feel after we eat, that tells me everything I need to know.
It's amazing what happens when you use real flour. Suddenly carbs aren't the enemy.
Food is friend, not poison.
